Abstract: The dry meat condition of Pacific oysters grown in Strangford Lough, Northern Ireland, was found to follow a seasonal trend, peaking during the summer months. Histological assessment of gonad development indicated that, although mature gonads occur between April and October, spawning does not occur. Chemical analysis of oyster tissues demonstrated commercially acceptable levels of glycogen, protein and fat, with no excessive contamination by heavy metals.
